Homemade Roasted Tomato Soup

Cut the tomatoes in half, chop the onions and place them on the oven tray with the garlic, salt, pepper, olive oil, and bey laurel. Cook them in the oven at 200C for 40 minutes.

Take everything out of the oven and separate the bay laurel and cook the rest with bouillon and paprika in medium heat on the stove for 10 minutes.

After cooking them for 10 minutes let them cool down a bit, then pour the mixture into a food processer or mash it with an electric potato masher.

Return the mixture into the pot and let it cook for 10 more minutes on medium heat. Add the milk after 10 minutes and let it stay on the heat a bit longer.

Our tomato soup is ready in a few minutes. You can decorate it with some cream and basil.

You can also toast some sliced bread with butter and enjoy them with your soup. Believe me, it is going to taste perfect.

Tips and tricks
- If you don't have bouillon at home you can use chicken stock, and if you are a vegetarian you can use water or some vegetable juice instead.
- You can use dried herbs such as dried basil and parsley in your soup.
- You can change the viscosity of your soup by adding more water of bouillon, but I think this recipe is a perfect balance and it is really delicious this way.
